Japanese-born chef Fumiko Sakai arrived in Italy 15 years ago to learn the secrets of authentic Italian cuisine, culture, and tradition. After working in several Michelin-starred restaurants, she became a permanent member of the team at Antica Corona Reale (two Michelin stars) in Cuneo and Ristorante Torre del Saracino (two Michelin stars) in Vico Equense.
During her eight years at Torre del Saracino, Sakai gained a deep understanding of traditional Campanian cuisine and its traditions. Today, her cooking philosophy is centered on the use of high-quality local ingredients, with a touch of Oriental flair.
As head chef of Vespasia Restaurant (one Michelin star) in Norcia, Italy, Sakai creates dishes that are both innovative and deeply rooted in Italian culinary heritage. Her passion for food and her dedication to excellence have made her one of the most respected chefs in the world.
